We've been making this super tasty grilled tilapia recently. You cook it on a wood plank:

Preparing the wood plank
You can usually go to stores and buy wood planks for grilling. Popular types of planks are alder and maple, but you can find other types, too. A lot of times it will specify what type of foods the plank is good for. I was cooking my tilapia on an alder plank.

It's good to buy planks specifically made for grilling. If you just pick up any random piece of wood, it might end up being treated with some sort of chemical that would be really dangerous to eat. Also, some wood, when it burns, releases chemicals that aren't good for consumption. So it's best to buy something that you know is good for cooking.

Soak the plank for 1-3 hours, depending on the hardness of the wood. Harder woods need longer to soak than softer woods. I always started soaking my alder plank about 2 hours before I started preparing the food, so it soaked for about 2.5 hours. Basically, though, you can't really soak it too long, but if you soak it too short it will catch on fire and ruin your fish.

Soak it in warm water. You can season the water, too. Add salt or soy sauce or any sort of flavour you want to infuse into the board.

Marinade
Make a marinade for the tilapia, and let it marinate for about an hour.

1/3 c vegetable oil
1 1/2 Tbsp rice vinegar
1 tsp sesame oil
1/3 c soy sauce
1/4 c chopped green onions
1 Tbsp ginger
1 tsp minced garlic

Mix all these ingredients together in some sort of dish where you can marinate your fish filets.
This is a good amount for two or three filets.
I usually go heavy on the soysauce and the garlic because I think it tastes better that way. You should doctor it to your own preferences.

Cooking the fish
When your planks are done soaking, put it on a medium-hot grill. Let them sit until the planks start cracking, and then flip them over.

Put your fish on the planks. Cook your fish until it's done (it will probably take about 20 minutes). Don't flip the fish - it will cook fine as it is. Keep the grill closed as much as possible to let the smoke from the planks build up in there and flavour the fish.

This fish is delicious served with rice.

yeah those planks, when used correctly, are really awesome. they impart a lot of flavor into the food you are cooking. in fact the last planks we used were cedar and we cooked tuna steaks with basically the same recipe for marinade and it was unbelievable. I actually made the grill too hot and ended up charring and almost burning the bottom side of the plank, however this worked out for us because it made the board smoke just that much harder. They were some of the best tuna steaks I have ever eaten and it came about from a mistake lol. I love to grill. Its my favorite way to cook and if I could cook everything on the grill I would.
